Spring Into Fertility
Spring into fertility with this beautiful buddha bowl featuring seasonal, colorful and fertility-friendly ingredients! Buddha bowls pack in nutrients with a combo of grains, protein, veggies and flavorful sauces like this lemon herb tahini π
Ingredients (single serving):
ΒΌ cup cubed roasted sweet potato
Β½ cup roasted asparagus
ΒΌ avocado
ΒΌ cup thinly sliced raw beets
1 TBS pumpkin seeds
ΒΌ cup microgreens
fresh dill
2 TBS feta cheese
Β½ cup @kettleandfire bone broth couscous
1-2 jammy soft boiled eggs
1-2 TBS @cava lemon tahini dressing - uses real ingredients, no seed oils
Batch Cooking Instructions:
sweet potatoes & asparagus: pre-heat oven to 400F and line a baking sheet with parchment paper. cube sweet potatoes and trim woody ends of asparagus. toss with olive oil, salt and pepper. roast for 20 minutes (check asparagus depending on thickness after 10 minutes)
bone broth couscous: replace βwater or brothβ amount with bone broth. bring bone broth, salt and olive oil to a boil. stir in couscous, remove from heat, cover and let sit for 5 min. fluff with fork
jammy eggs: pre-heat the air fryer to 300F. add eggs to air fryer and cook at 300F for 11 minutes. shake halfway. place eggs in an ice bath for 1-2 minutes immediately after 11 minutes (donβt skip this step)
